Guilt Free Banana Bread

Not only is this Paleo banana bread recipe delicious, but it’s also nutritious and guilt-free.

Gluten-Free Banana Bread Wet Ingredients

  • 4 super ripe bananas
  • 3 eggs
  • 1/2 cup unsweetened coconut milk
  • 1/2 cup unsweetened apple sauce
  • 2 tbsp honey
  • 1 tsp pure vanilla
  • 3 pitted dates

Gluten-Free Banana Bread Dry Ingredients

  • 1 1/4 cup coconut flour
  • 1/4 cup arrowroot flour
  • 2 tsp cinnamon
  • 2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup chopped walnuts or unsalted peanuts (optional)
  • 1/2 cup Craisins (optional, you may use raisins as well)

Gluten-Free Banana Bread Baking Method

  • Preheat oven to 350F
  • Grease a loaf pan with coconut oil
  • In a small glass bowl mix all of your dry ingredients and set aside
  • Place all of your wet ingredients in a food processor or blender and blend well
  • Fold your wet ingredients into your dry ingredients till a soft batter is formed
  • Pour your batter into the loaf pan and bake for 35-40 minutes
  • Your banana bread is cooked when a toothpick inserted in the middle of the loaf comes out clean
  • Allow your banana bread to cool for 25-30 minutes before serving

      Hi Lori, I am sorry you didn’t like this banana bread recipe but as someone who enjoys baking breads I can’t say that I am surprised. Banana bread is one of my all-time favorite treats so when my sister-in-law talked me into trying the Paleo diet I was adament that she help me find a “Paleo-approved” banana bread recipe. The two of us experimented and came up with this recipe. When I first tasted it, it tasted nothing like the traditional banana breads I am used to baking with sugar, butter, flour, etc. But I had to remind myself that those ingredients are not part of this diet and I had to adjust my taste expectation accordingly. Overall, I’ll agree with you that this banana bread does not entirely taste like traditional banana bread but considering the confines of this diet this recipe is as close as one can get.
      * The only change I can suggest you make is to use almond flour instead of coconut flour since within the Paleo diet these two gluten free flours can often be used interchangeably.
