What Is Quinoa?

Quinoa, a crop closely resembling grain, has been a staple food to the people of South America for well over six thousand years.

In fact, quinoa played such an important role in the lives and cultures of the people of South America that the Incas referred to it as a sacred crop and included it in most of their religious ceremonies.

But, this high protein food faded into obscurity when the Incas were conquered by the conquistadors and forced to grow corn instead.

Recently, quinoa has gained tremendous popularity amongst western vegetarians, and health conscious individuals, as a high protein, gluten-free, high fiber substitute for rice and oatmeal.

That is because we now understand that quinoa contains a balanced set of amino acids, including high amounts of folic acid, which make it an unusually complete source of protein amongst plant foods.

The following 3 quick and easy quinoa recipes highlight the many ways quinoa can be incorporated into a healthy diet.

Quinoa With Fruit & Nuts: The Perfect Breakfast

Ingredients:

  • 1 cup cooked quinoa
  • 1 medium banana
  • 1/4 cup diced, dried apricots
  • 1/4 cup dried cranberries
  • 1 tbsp salted sunflower seeds
  • 1/8 cup diced unsalted cashews
  • Pinch of salt
  • Sprinkle of cinnamon

Preparation:

  • Cook quinoa and let it cool
  • Mix in fruit and nuts
  • Add salt and cinnamon
  • ENJOY!

Garden Salad Quinoa With Roasted Eggplant For Lunch

Ingredients:

  • 1/2 cups cooked quinoa
  • 1 butternut squash, peeled and cubed
  • 1 medium eggplant, unpeeled, cubed
  • 1 cup diced oyster, shiitake or portobello mushrooms
  • 1/4 cup julienne carrots
  • 2 cloves garlic, crushed
  • 1 tsp finely chopped cilantro
  • Olive oil
  • 1 tbsp lemon juice
  • 1 thickly sliced, red bell pepper
  • 1 diced shallot
  • 2 cups reduced-sodium vegetable broth
  • Salt and pepper to taste

Preparation:

  • Preheat oven to 425
  • Arrange eggplant, squash and bell pepper on a greased, foil-lined dish and sprinkle with olive oil, lemon juice, salt, pepper, and cilantro.
  • Roast vegetables for 35-45 minutes or until tender
  • Cook quinoa in vegetable broth and let it cool
  • Sautee garlic, shallot and mushrooms in olive oil
  • Mix vegetables, including carrots, with the quinoa, season to taste and ENJOY!

Mediterranean Quinoa Salad: The Perfect Light Dinner

Ingredients:

  • 1 cup cooked quinoa
  • 1 Avocado
  • 2 Mediterranean cucumbers, peeled and diced
  • 1/8 cup pitted and diced black olives
  • 1 tsp diced parsley
  • 1 shallot, diced
  • 1/2 cup crumbled feta cheese
  • 1 tbsp olive oil
  • 1/2 cup diced tomatoes
  • 1/2 tsp grated orange zest
  • 1 tbsp lemon juice
  • Salt and pepper

Preparation:

  • Cook quinoa and let it cool
  • As quinoa cools, dice vegetables
  • Mix vegetables with quinoa
  • Drizzle with olive oil, orange zest, and lemon juice
  • Add feta cheese before adding salt and pepper to avoid making the salad too salty
  • Top with Avocado and ENJOY!
